【 摘 要 】
The daily intakeof phenolic compounds does not necessarily reflect the dose at which they reachthe physiological targets in the organisms. The biological activity of phenoliccompounds metabolites found in blood, organs and target tissues, as a resultof digestive and hepatic activity, may differ from those of the native formsof the substances. This review discusses the absorption and metabolism of phenolicacids, a class of phenolic compounds abundant in food, and the methodologiesused for evaluation of bioavailability.
