【 摘 要 】
The ripening blueberry (in purple skin) were stored in refrigeration condition (4°C) and room temperature (25°C). By measuring the changes of PG, PME and β-Gal enzyme activities in blueberry over a period of time, we found that the changes in enzyme activities of PG and PME were negatively correlated with the softening of blueberry, and low temperature can inhibit the increase of PG and PME enzyme activity in the early stage.
