【 摘 要 】

Inthisstudy,theeffectsofchitosanextractedfromMetapenaeusstebbingishellsoncolorpropertiesofgiltheadseabream(Sparusaurata)duringrefrigeratedstorage(4±1ºC)wereexamined.Thecontrolandtreatedfilletsampleswereanalyzedperiodicallyforcolor(L*,a*,b*)analysis.Accordingly,itwasdeterminedthatchitosanhasapositiveeffectonL*anda*valuesofgiltheadseabream(p<0.05),whileitdisplayednoeffectonb*value(p>0.05).Anysignificantdifferencewasnotdetectedbetweenchromaandhuevaluesofgroups(p>0.05).
