solvent extraction oil(SEO), supercritical fluid extraction oil(SFO), and screw pressed extraction oil(SPO). Total unsaturated fatty acids were 97.72~97.92% and oleic acid(80.13-81.16%) was highest, followed by linoleic acid(14.98-15.69%). Only γ-tocopherol among tocopherols was present and β-sitosterol was main phytosterol in ginseng seed oils. SPO had the highest levels of γ-tocopherol(5.95±0.25 mg/100 g oil) and β-sitosterol (41.97±5.29 mg/100 g oil). Also, the content of phenolic compound(mg gallic acid equivalent/100 g oil) was highest in SPO(56.32±1.47). SPO had greatest oxidative stability with induction time of 16.58 hours. Acid values and peroxide values of GSOs were increased with increasing the storage days. In details, acid values and peroxide values were significantly lowest in SEO and SPO, respectively(p<0.05).Unsaponifiable matter in GSOs was obtained by hexane extraction after saponification of GSOs. The antioxidant capacities were assessed using the DPPH radical scavenging activity, reducing power and metal chelating activity assays. The unsaponifiable matter in SPO showed highest antioxidant activities in DPPH radical scavenging activity and reducing power assay. There was good correlation between antioxidant activities and tocopherol and phytosterol content. But unsaponifiable matter in SEO had the highest metal chelating activity. This results showed that unsaponifiable matter in GSOs had other antioxidants, except for tocopherol and phytosterol. In conclusion, Screw pressed extraction possesses significant oxidative stability of GSOs, and unsaponifiable matter in GSOs had the antioxidant activities, which suggests its possibility as food resources of fats and a functional food ingredient.
