【 摘 要 】

Quinoa is a dicotyledonousspecies for seeds and, therefore, is notknown as a cereal grain and is a pseudograin, which is introduced nowadays as anew crop in the world. Population growthand the need for more food put additionalpressure on the environment, especiallyon water resources and agronomicecosystems. This has led to more attentionto plants that grow at different latitudesand altitudes. Climatic and environmentalchanges affect agricultural inputs,especially water resources. So, the bestway of adapting to the current situation isthe introduction of low-water, saltresistant, and drought-tolerant plants tothe recent climatic changes. Waterscarcity has become a serious problem inmany countries. This restriction has had asignificant impact on the development ofcountries. The plants which grow in aridand semi-arid regions are often exposed toadverse environmental factors, such asdrought or salinity. Salinity and droughtstress, more than any other factor,decrease crop yields around the world.These two abiotic stresses are the mainlimiting factors for crop production,especially in arid and semi-arid regions ofthe world. Quinoa is an exceptional plantthat can adapt to adverse conditions andcan serve as a solution to the challenge ofglobal food security. Recent droughts thatoccurred in the world have promptedgovernments to include plants in theirdevelopment plans, which are adapted tothe country's existing water and soilconditions and have high nutritionalvalue. This way, quinoa cultivation canensure their food security in the comingyears.
