«Bìgoli make famous Verona». A forgotten “excellence” of the local gastronomic heritage

【 摘 要 】

Bìgoli are a sort of thick spaghetti which are nowadays considered a typical dish of Veneto. Through the examination of archival and printed documentation, this contribution shows that this pasta could be cooked by following a Veronese recipe which is now completely forgotten despite its wide popularity during the 18th and 19th centuries. The reason is to be found in the fact that, during the 20th century, traditional Italian food was no longer classified according to its provincial origin, but rather promoted on a regional scale. It is now possible to resume local peculiarities by considering the micro-territorial context they come from, as is the case with bìgoli co le agole, a typical fish found in the Garda Lake.
