【 摘 要 】
Based on an ethnographic approach, this article describes several challenges that professionals face during the service of collective meals in French nursing homes. Two main professional recommendations and their translation into professional practices are considered. The prevention and treatment of malnutrition and the fight against social isolation suffered by elderly residents of the institution. Due to the increase in food service responsibilities, a reduced number of employees and a definition of well-treatment though the production of collective social habits, mealtimes often cause professional difficulties where the fiction of conviviality plays a pivotal role.
