【 摘 要 】

Inthestudy,theproximate,fattyacidandmineralelementcompositionsofspinyeel(Mastacembelusmastacembelus)caughtfromAtatürkDamLakewereinvestigated.Accordingly,themoisture,ash,proteinandlipidcontentswerefoundas75.05%,1.15%,19.53%and3.33%,respectively.Thefattyacidcompositionwerefoundtoconsistof38.49%monounsaturated(MUFA),33.87%saturated(SFA),21.47%polyunsaturated(PUFA),1.62%eicosapentaenoicacid(EPA),and8.41%docosahexaenoicacid(DHA).Totaln-3/n-6ratiowasdeterminedas2.Amongthemineralcontents,Khadthehighestproportion.Asaresultofthestudy,spinyeelwasconcludedtobeabeneficialfoodsourceforbothhumanhealthandnutrition.
