【 摘 要 】
Themajorwheyproteins,β-lactoglobulin(β-LG)andα-lactalbumin(α-LA),arestronglycorrelatedwiththenutritionalvalueandthefunctionalpropertiesofmilkwhey.Ovinewheyhasauniqueproteincompositioncomparedtothatofbovinewheyanditisespeciallyrichinproteins.Geneticpolymorphismofβ-LGusingPCR-RFLPandα-LAusingPCR-SSCPwasanalyzedinthreenativeEgyptiansheepbreedsnamedBarki,RahmaniandOssimi.Digestionofresultingamplifiedfragmentsofβ-LG(452-bp)withRsaIendonucleasedifferentiatedbetweenthreedifferentgenotypesAA(69.77%),AB(26.74%)andBB(3.49%).TheresultsshowedthatAallelewaspresentintheEgyptiansheepbreedswithafrequency(83.14%)higherthanBallele(16.86%).ABallelesappearedatfrequencies70.4%29.6%,95.0%5.0%and82.8%17.2%inBarki,RahmaniandOssimi,respectivelySSCPresultsoftheα-LAamplifiedfragments(166-bp)showedthatthethreenativeEgyptiansheepbreedspossesstwodifferentpatternsrelatedtothedifferenceinnucleotidesequenceswithfrequencies88.1%and11.9%.Thefrequenciesofpattern1rangedfrom81.48%inBarkito89.66%inOssimiand92.86%inRahmanibreedswhereasthepattern2waspresentatfrequencies18.52%,7.14%and10.34%inBarki,RahmaniandOssimibreeds,respectively
