【 摘 要 】
Inthisstudy,effectsofdryingapricotofavariety“hacihaliloglu”byapplyingSO2onthequalityofdriedfruithasbeenanalysedbycomparingittothemethodofdryingitdirectlywithoutsulphuring.Accordingtothefindings,ithasbeendeterminedthattherearesubstantialdifferencesbetweenthesetwodryingmethodsintermsoftotalweight,dehydrationaspercentageandlengthofdryingtime.Weightlossinfirstthreedaysofdryingwasimportantinbothmethodswhileitwasunimportantforthefollowingdays.DifferencesbetweentwomethodsintermsofsomephysicalspecificationslikeWaterSolubleSolidContentsatthebeginningofthedrying,and,driedfruitratio,stoneweight,seedweight,andstoneratioattheendofthedryingweredeterminedtobeunimportant.
