【 摘 要 】
Consumptionofoliveoilisconsideredimportantforpreservingahealthyandrelativelydisease-freepopulation.TheMediterraneandiethassignificantprotectiveeffectsagainstcancerandcoronaryheartdisease.Consumptionofoliveoilmustbeincreased,therefore,duetodietaryandhealthconcerns.TheaimofthisstudywastoexploreTurkisholiveoilconsumerbehaviorusingconjointanalysisandtodeterminethebestproductqualitysetwhichmaximizesthetotalcustomerutility.Forthisend,conjointanalysisintheSPSSwasdonewith250householdsurveydata.Theresultsofthisresearchshowthatthemostimportantthreefactorsonoliveoildemandareitsoliveoiltype,packageandprice,respectively.Ontheotherhand,thebestproductqualitysetisvirginoliveoiltype,tinboxpackage,strongtaste,yellowcolor,soldinthehypermarketat5€/ltandwithpromotion.Resultsindicatethatconsumerspreferoliveoilswithvirgintype,lowprice,strongtasted,yellowcolorandpromotion.Asaresult,virginoliveoil'sprotectivefunctionhasabeneficialeffectonhumanhealthandnutrition;therefore,thierpenetrationratioshouldberapidlyincreased,andtheirconsumptionshouldbemadeincentive.
