Thescientificandtechnologicalinnovationinthefoodindustryhaveledtoafundamentalbreachofrelationshipsthathumanhadphysicallymaintainedwiththeirenvironment.'Industrialization',perceivedlargelyasa'artificiality'offood,hasledtotheideathatweknowlessandlessaboutwhatweeat,thoughwehaveneverbeforeknownsomuchaboutfood,disease,biology,andphysiology.Today,ourrelationshipwithfoodis,orisbecoming,verydifferentfromwhatithasbeenuptonow.Itsufficestoconsidersomeofthenewtermsas,forexample,moleculargastronomyornutrigenomicstobecomeawareofthesenewrelationshipsbetweenpeople,theirfood,andtheirhealth.
