【 摘 要 】

After the dairy sector, the meat sector is the most important sector in the rural communities of Asturias. The closing of many dairy operations due to reduced quotas has caused an increase in ranching, mainly aimed at meat production. In this piece, we will analyze the recent changes in the types of meat operations, including production changes, markets, the meat industry, and commercial and home slaughtering, which are being transformed by legislative, economic and consumption changes, and because of the achievement of a protected geographical indication “Beef from Asturias�?.
