【 摘 要 】
Milk is a food with a social destiny. For its commercialization, there is a quality payment system in Cuba, where the physico-chemical parameters are considered. Season influences in the production of milk and its nutritional components. This scientific research is aimed at determining the season influence on the physico-chemical quality of milk in a western province of Cuba. The content of fat, protein, total solids, non-fatty solids by means of the infrared spectrophotometry, as well as density and the cryoscopy point were determined. The results showed that milk meets the physico-chemical parameters established by the current Cuban regulations and that season influences on the content of protein and non-fatty solids, with a slight increase of all the components during the rainy period
