【 摘 要 】
This paper presents data on the determination of parameters of extraction of plant materials and the assessment of the nutritional value of the obtained extracts. As the main object of research was selected Schisandra chinensis. The optimal extraction parameters were established: duration - 6 hours, temperature - 40-50°C. As a result of the work, organoleptic, physicochemical parameters and nutritional value of the obtained extracts were determined. The results obtained indicate that the developed extracts have a high nutritional value and can be used as sources of biologically active substances in the preparation of functional products.
