【 摘 要 】

Recently, in Krasnoyarsk, there has been an increased demand for local plant products, in particular, for vegetable pastes and marinades. An important aspect is the fact that the products should be as useful as possible, have high taste qualities and be from local producers. This article proposes the idea of opening a shop for the production of homogenized pastes and marinades from local vegetables with the addition of squeezed cowberries and cranberries with enhanced microbiological resistance for implementation in the food industry.
